Well, this cocktail is a nod to the few brave trees daring to blossom in January which I noticed on a walk today. I found this cocktail in this lovely book and offer a few tweaks of my own...
Orange Blossom Mimosas
Pour enough chilled freshly squeezed orange juice to fill your glass by a third (I used clementine juice over the festive season, blood orange juice would look stunning). Add one or two drops of orange blossom water... this stuff, despite it pretty name, is powerful stuff so be sparing. Top up with champagne or prosecco and drink, prettily, straight away.
