So, I am feeling a little of that pesky new-year sluggishness at the moment, it is too dark and cold and I probably ate too much over the holidays. I am not militantly anti anything when it comes to food, but I do know that when I feel like this a little gluten avoidance does me good. Cake avoidance makes me sad. So gluten free HEALTHY cake it is then!

315g gluten free self raising flour (I use Doves Farm)
1 tsp baking powder
90g caster sugar
1/2 tsp cinnamon
2 eggs
250g buttermilk
60g melted butter, cooled
Grated zest of 1 orange
150g fresh or frozen berries
2 tbs of pearl sugar or Demerara sugar
Pre-heat the oven to 200 degrees Celcius. Grease and flour a loaf tin. Mix all the ingredients apart from the berries and pearl/Demerara sugar. Scoop into your loaf tin. Put the berries on top and push into the cake mixture. Sprinkle the sugar on top and bake for 45 mins to 1 hour until golden on top and a skewer inserted comes out clean.
